I made my mom’s fabulous carrot cake and when I told my brothers, they invited themselves to join… The cake is that good (they also love the friends!)
I love making my mom’s recipes because it feels like bringing the past into the present. And because this is a *foolproof* carrot cake – as long as the tin is big enough. The one time I made it in a too-small tin, I watched in horror as the cake slowly rose over the sides of the tin, volcano-like, and overflowed into the oven.
